Chocolate Toffee Pecan Cookies

Football may be a Team Sport – but when it comes to spending quality time in the kitchen – there is nothing better than teaming up with creamy Nestle Mackintosh Toffee, toasted pecans and chocolate flavor.  This classic “Triple Play” produces a rich and tasty chocolate toffee pecan cookie.  Sorry – you have to provide your own tall glass of milk!

Chocolate Toffee Pecan Cookies

INGREDIENTS

1 cup all-purpose flour
6 tablespoons unsweetened cocoa powder [you reduce to 4 tbls. if you have your Sweet Tooth somewhat under control during the Holiday Season…]
1/2 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons unsalted butter (1 stick at room temperature)
6 tablespoons packed dark brown sugar
6 tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup coarsely chopped toffee [we suggest using Nestle Mackintosh Toffee pieces – cool or chill, then toss them into your food processor but try to keep them somewhat coarse]
1/2 cup toasted pecan halves, chopped

INSTRUCTIONS
Heat oven to 350°F and place baking rack in the middle.  Combine the flour, cocoa, baking soda, and salt in a medium bowl.  Mix ingredients completely to break up any lumps. Line a baking sheet with parchment paper.  Combine the butter and sugars in the bowl.  Mix on medium speed until light and fluffy, about 3 to 4 minutes.  Add the egg and vanilla. Mix on medium speed until smooth, about 1 minute.  Reduce mixer speed to low then add the flour mixture – mix until the dough comes together.  Add the chopped toffee pieces and pecans – continue to mix until ingredients are evenly distributed.  Scoop the dough by rounded tablespoons and place 1 inch apart on the prepared baking sheet.  Bake until the cookies are set around the edges but still soft to the touch  – about 9 to 11 minutes.

Remove cookies from the oven and allow to cool to room temperature before removing the cookies from the baking sheet.  Repeat with remaining dough.  Cool, then store the cookies in an airtight container to maintain their soft texture.
